Flyin Blind on Empty Tanks (but full hearts)

22 DAYS!!!! 
That's right folks we have 22 days left of life as we know it. I am still in shock and mostly awe that we are really really doing this! I know that my to-do list in the next three weeks is only getting longer but I am just sitting here, smiling, totally at peace with our adventure to come. Jordan and I sat last night listening to the crickets and watching the stars, soaking it all in and mostly just reflecting on our lives so far and all that is to come. It's crazy and insane to me that in 22 days I am going to be jumping in a 21 foot motorhome and just driving...... with no direction, no job, no plans, and not much cash. We are literally going to be flying blind on "low" tanks! But I cannot describe to you the overwhelming sense of peace that fills our souls! We are sure that this time God has a plan in mind and all we need to do is take a leap. Jump head first and not look back. And man I am so ready for this. Reminds me a little bit of our first trip to Kauai together. We had no idea what was going to happen but it turned out to be one of the most influential and most incredible trips of my life. I have no doubt that this next adventure will be nothing less. We have lots of little things to do to prepare for our journey and get Destiny ready, but we are taking it all one day at a time! We have no destination or return trip planned so its hard to imagine what we will actually need. I am so excited for the road that lays ahead, of all the people we will meet and love, the beauty and creation of God that we will witness and the things he has ahead for us!

Gluten-Free Baked Oatmeal Casserole

Sounds Delicious!!!!!!
 Gluten-Free Baked Oatmeal Casserole
Total Time: 50 minutes
Serves: 6

Ingredients
2 cups gluten-free rolled oats
1/3 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup walnut pieces
1 cup raspberries {any berries work}
1/2 cup milk chocolate chips
2 cups milk
1 large egg
3 tablespoons butter, melted
1 tablespoon vanilla extract
1 ripe banana, peeled, 1/2-inch slices



Instructions

Preheat oven to 375°F and generously spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet.
In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts, half the strawberries and half the chocolate. (Save the other half of strawberries, walnuts and chocolate for the top of the oatmeal).
In another large bowl, whisk together the milk, egg, butter and vanilla extract.
Add the oat mixture to prepared baking dish. Arrange the remaining strawberries, walnuts and chocolate on top. Add the banana slices to the top then pour the milk mixture over everything. Gently shake the baking dish to help the milk mixture go throughout the oats.
Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar.
